Avocolada Chia Pudding
pineapple, about 2 1/2-3 cups
coconut water, 2 cups
2 bananas, keep separate
avocado, save the pit
2T coconut butter
pinch of salt
juice of 1 lime
3T chia seeds
Place all the ingredients, except the chia and 1 banana, into the blender and puree. Then, stir in the chia seeds, the avocado pit and the other banana sliced. The pit will help keep the avocado fresh for a few days. Place in the fridge and enjoy a few hours later.
